Scamorza is an Italian spun paste cheese named for its pear shape. During the traditional ripening process the cheese is hung giving scamorza its name, which in Italian means, "beheaded." It is a semi-soft white cheese with a texture comparable to that of a firm, dry mozzarella.
For our smoked version we use a blend of apple, cherry, and hickory wood chips, naturally smoking this cheese leaving it with a milky, creamy finish and smoky, sweet caramel flavor.
Keep refrigerated Vacuum-sealed package may be stored for up to three weeks.
Once opened, tightly wrap the remaining cheese and store in an airtight bag up to 7 to 14 days.
