Scamorza is an Italian spun paste cheese named for its pear shape. In Italy, during the traditional ripening process the cheese is hung giving scamorza its name, which in Italian means "beheaded." It is a semi-soft white cheese with a texture comparable to that of a firm, dry mozzarella, but with more elasticity and less moisture. Scamorza melts beautifully, and has the taste and aroma of sweet milk and light cream. Scamorza is a fresh cheese made from pasteurized cow’s milk and crafted into 10 ounce pieces.
Our Scamorza is the perfect substitute for Mozzarella, although a bit drier it is equally as smooth and shiny in texture. Scamorza has excellent melting qualities, making it great in baking dishes and for griddling. We suggest using it on a grilled cheese. Cut the cheese length wise, top with prosciutto and grill. Once the crust forms on the bottom drizzle with olive oil and serve on toasted ciabatta bread. Try using in pasta, on a pan-fried arugula salad, or melted on pizza. Scamorza is enjoyed fresh, and makes for an excellent table cheese.
Vacuum-sealed package may be stored up to 3 months.
Once opened, tightly wrap the remaining cheese and store in an airtight bag up to 7 to 14 days.
