4 Tbs. extra virgin olive oil
1 garlic clove
1 Tbs. chopped fresh herbs
½ tsp. salt
½ oz. Fiscalini Cheddar
1 Tbs. white wine vinegar
Freshly ground black pepper to taste
1. Combine the olive oil, garlic, herbs, and salt in a blender. Pulse until well blended.
2. Add the cheese and vinegar. Pulse then liquefy on high speed.
3. Season with pepper and pulse to combine.
4. Pour amount preferred on your favorite salad and toss.
*To make a classic vinaigrette use 4 parts oil to 1 part vinegar, and ½ oz. of cheese to each ¼ cup of oil.
